Does your crockpot sit in the cupboard and gather dust or are you a huge fan and use it all the time? I’m somewhere in-between. I have a handful of recipes that I cook only in my crockpot. Tortilla soup, traditional chili, sweet potato chili, and pulled pork. I need to acquire a few more slow cooker recipes, so if you have a favorite, feel free to share it with me.
What’s not to love about placing all your ingredients in, setting a timer, and coming back 8 hours later to dinner being ready? I think the reason I don’t use mine more often, is most recipes that I cook in it are winter meals, so during the summer months, it sits, and we BBQ outside. But, not for this recipe. Pulled Pork Sandwiches are good any time of year, for lunch or for dinner.
We enjoyed ours served on toasted Hawaiian rolls, with a side of grilled fresh pineapple, and a simple coleslaw.
Everything into the crockpot. See you in 8 hours.

It was such a beautiful evening, that we dined outside. And this was the perfect warm weather meal to enjoy!!
For my simple slaw, I used red and green cabbage, carrots, and red bell pepper. Slice everything very , very thin. I cheated and used a bottled slaw dressing (Marie’s is my favorite). Top with a little cracked pepper. I think that cole slaw is best made earlier in the day and refrigerated.
I sliced a fresh pineapple into thick slices and put them directly onto the BBQ grill for about 3-4 minutes per side.

- 6# bone in pork shoulder
- 1 large yellow onion (sliced)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 cups BBQ sauce (I use Bullseye)
- 2 cups root beer (or a dark beer works also)
- Hawaiian rolls (or your favorite soft sandwich roll)
- Mix salt, pepper, garlic & onion powders together in small bowl. Rub all side generously with seasoning mix.
- Slice yellow onion.
- In glass measuring cup or bowl, whisk together BBQ sauce and root beer.
- Place meat in large crockpot. Top with sliced onions. Pour BBQ sauce mix over top.
- Cover and set to 8 hours.
- When done, the meat should easily fall off the bone.
- Remove from sauce and shred meat using two forks.
- Scoop onions from sauce and add to meat.
- Add in approx one cup of cooking liquid to meat and onions.
- Serve on grilled buns with additional BBQ sauce.
FYI, this was a large piece of meat. Simply adjust for a smaller cut.
